M’sakhan (Chicken with onion & sumac)

M’sakhan is a traditional Palestinian dish.  It can be made with pita bread, but is usually made with large peasant flat bread.  Today I used lavash.  Use lots of onion and good quality olive oil for this dish.

Begin by chopping 3 -4 large red onion.  Place in saucepan over medium heat with about 1/2 cup olive oil.  Saute until soft and translucent.

Add 2 small handfuls of sumac (this sour ground “fruit” can be found in middle-eastern markets)

Cook for another 5 minutes and then remove from heat.

Prepare chicken, cutting into 8 pieces.

Tear bread into large pieces.  Lightly oil a large pan and line with bread pieces.

Sprinkle onion mixture over bread.

Place chicken over bread and add salt, pepper, allspice and a little cinnamon.

Cover with remaining onion mixture

Bake in 350 degree oven for about 90 minutes, until chicken reaches an internal temperature of 165, and is golden brown.
