Sourdough Chewy Pretzels

Add the following ingredients into a bread machine on the dough cycle.  (Or alternately mix in heavy duty mixer with dough hook):

3/4 Cup Lukewarm Water

1 Cup Sourdough Starter (without feeding, straight from the refrigerator)

3 Cups All Purpose, or Bread Flour

1/4 Cup Non-fat Dry Milk

1 Tbl Sugar

1 tsp Salt

1 Tbl Olive Oil

2 tsp Yeast

After the dough is finished (if using mixer, let dough rise for about 45 minutes) divide into about 12 equal balls.

Roll each ball into a rope about 8-10 inches long.

Then twist into pretzel shape

Meanwhile fill a stockpot with water and bring to a boil.  Add 1/3 cup baking soda, and continue on a medium boil.

Dip each pretzel into boiling water a few at a time, cook for about 10 seconds on each side and then drain and place on a parchment paper lined baking sheet.

Preheat oven to 350 degrees.

Brush with melted butter, sprinkle with coarse Kosher Salt

Bake for about 30 minutes until golden brown.
